Rolling Eggs & Easter Recipe ♡

With hard boiled, imaginatively painted and decorated eggs in their hands, the children of the Faroe Islands gather on the hills. It is Easter Monday and it is time for egg rolling! Down the slopes, over snow, as well as grass, the eggs roll. Which egg will roll the longest? And will you eat it before the gulls snap it?

For Easter, the whole family would visit our grandparents in the Southern Islands. Opposite the house was a steep slope where we would roll our Easter eggs. My grandparents had Geese that sometimes laid more eggs than they could breed - so we were given these eggs to paint and roll for Easter.

- Swedish Easter Cake Recipe  -

Growing up in Sweden, this cake was something to look forward to every Easter. A simple, yet yummy one, perfect to bake together with your little ones!

What you need:

3 eggs

1.5 dl sugar

2 dl flour

2 tsp baking powder

1/2 dl milk


Raspberry jam, around 2 dl

Whipped cream

Canned halves of apricot or peach

Baking paper


How to:

1. Heat the oven to 200 °C.

2. Whip egg and sugar until white and fluffy. Add flour and baking powder to the mix, being careful not to whip too hard and long. Add milk.

 3. Spread out the batter on a baking paper and bake in the oven for about 5 minutes. It is a quick one so be careful!

 4. Turn your cake over to another baking paper and gently pull the old one away. Spread out jam evenly across the cake and roll it together.

 5. Once cold, cut it into slices and put them on plates. Put on whipped cream and finish by placing fruit halves on top. Enjoy!
